If you need a little inspiration for your leftover Christmas turkey, here are some of our favourite recipes to help you make the most out of these delicious leftovers.

Leftover turkey casserole

BBC Good Food has produced this leftover turkey casserole recipe which uses up all of your leftovers to create a dish just as tasty as Christmas dinner.

You will need:

  • 2 finely chopped onions
  • 1 apple (cored and chopped)
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried sage, or 5 sage leaved, chopped
  • 2 tablespoons of plain flour
  • 300ml vegetable or chicken stock
  • 2 tablespoons of wholegrain mustard
  • 2 tablespoons of honey
  • 400g-500g leftover turkey, shredded
  • 350g (approx) leftover roasted vegetables e.g. roast potatoes, parsnips, carrots, broccoli etc.

 

How to prepare:

  1. Chop the onion and the apple and fry in oil until softened in a casserole dish or a deep pan.
  2. Stir in the sage for 1 minutes and then stir in the flour
  3. Gradually stir in the stock and then add the mustard and honey
  4. Bring to a simmer and stir in the leftover turkey and vegetables
  5. Cover and gently simmer for 15 minutes or until turkey is piping hot

Leftover turkey curry

This recipe from allrecipes.co.uk is a tasty dish that will spice up your leftover turkey.

You will need:

  • 3 tablespoons of olive oil
  • 1 finely chopped onion
  • 3 cloves garlic, finely chopped
  • 2 tablespoons of curry powder
  • 1 tablespoon of coriander
  • 2 teaspoons of turmeric
  • 1 teaspoon of cinnamon
  • 300g leftover turkey, cut into pieces
  • 800ml chicken stock
  • 1 tin (400g) chopped tomatoes
  • 400g mashed potato
  • 2 sweet potatoes, peeled and diced
  • 100g frozen garden peas
  • 2 carrots, diced
  • 1 teaspoon of salt
  • 3 tablespoons of sugar
  • Half a teaspoon of cayenne pepper

 

How to prepare:

  1. Prepare the vegetables and heat olive oil in a large pan over medium-high heat for 2 minutes
  2. Add onions and garlic and cook for 5 minutes
  3. Stir in the curry powder, coriander, turmeric and cinnamon and cook for 1 minute
  4. Add the leftover turkey and stir well
  5. Pour in the chicken stock and tinned tomatoes and stir
  6. Add the mashed potatoes and stir to combine and break up the potato
  7. Cook on medium-high for 20 minutes and stir occasionally
  8. Add the sweet potato, peas and carrots and bring to the boil
  9. Stir in salt, sugar and cayenne and turn heat down to simmer for approximately 30 minutes, or until carrots and sweet potatoes are cooked but still firm

Leftover Turkey BLT

A twist on one of everyone’s favourite sandwiches, this is a tasty way to make use of the leftovers.

You will need:

  • White bread, toasted
  • Iceburg lettuce
  • Sliced tomato
  • Cooked, crispy bacon
  • Leftover turkey, cut into pieces or sliced
  • Cranberry sauce

 

How to prepare:

  1. Fry/grill the bacon until crispy
  2. Whilst the bacon is cooking, lightly toast 2 slices of white bread
  3. Once toasted, spread the cranberry sauce over the bread
  4. Layer tomatoes, lettuce, crispy bacon and turkey onto the bread
