Duck is a fantastic meat to cook with and makes for an amazingly flavoursome meal.

Ideal for: Family lunch or dinner on a weekday or weekend party

Serves: 4 people

Difficulty: Medium

  • A few glugs of herb infused oil
  • 4 quality duck breasts
  • Salt & pepper
  • 2 small red onions thinly sliced
  • Half a teaspoon of cayenne pepper
  • Can of butter beans or similar
  • 20 ml of orzo
  • 10ml red wine vinegar
  • Sprinkle of chopped thyme
  • Sliced radishes
  • Optional toasted pine nuts and asparagus

How to make it

  1. Rub the oil on the duck breasts and sprinkle on the salt and pepper
  2. Add some oil and salt and pepper to the red onions in a bowl
  3. Put a couple of glugs of oil into another bowl and mix with the red wine vinegar and cayenne, add a little more salt and pepper
  4. Cook the beans in boiling water for 3 minutes until tender. Drain and slice
  5. Cook the orzo in exactly the same way then combine the beans and the orzo into a larger bowl with a knob of butter and add a tiny bit more red wine vinegar
  6. Grill the duck breasts for 4/5 mins each side and let them rest for the same
  7. Grill the red onions tossing after 3 mins
  8. Combine the orzo/beans with the onions and sprinkle with the thyme and a little more oil
  9. Serve with the duck breast on top and scatter with pine nuts and compliment with asparagus
