30 July is National Cheesecake Day – the perfect excuse to indulge. To celebrate, here’s a couple of our favourite cheesecake recipes – and they’re so easy to make, why not get little hands busy in the kitchen?

Chocolate Hazelnut Cheesecake

This recipe from BBC Good Food is the perfect no-fail chocolate dessert.

You will need:

  • 140g unsalted butter
  • 300g digestive biscuits, broken up
  • 500g cream cheese, softened
  • 85g icing sugar
  • 300ml double cream
  • 1 teaspoon vanilla extract
  • 15 forreror rocher (or any alternative hazelnut chocolates) – 5 roughly chopped, remainder put aside for decoration
  • 4 tablespoons of Nutella (or any alternative chocolate hazelnut spread)
  • 25g hazelnuts, roughly chopped

 

How to prepare:

1. Melt the butter in a small pan over medium heat

2. Put the biscuits in a strong, clean plastic bag and crush with a rolling pin – or alternatively blitz the biscuits in a food processor

3. Once crushed, stir though the melted butter until well combined

4. Tip into a cake tin and press down firmly into the base and then put in the fridge to chill

5. Beat the cream cheese and icing sugar in a bowl until softened

6. Whisk the cream and vanilla in a seperate bowl until soft peaks form, then fold into the cream cheese and stir through the chopped chocolates

7. Spoon over the biscuit base and smooth with a spatula

8. Once smooth, cover with cling film and chill in the fridge for at least 6 hours or over night

9. Once set, place the chocolate hazelnut spread in a saucepan and melt over a low heat for 3-4 minutes or until runny

10. Allow to cool slightly and then spread over the top of the cheesecake

11. Decorate with remaining chocolates and some chopped hazelnuts and chill until ready to serve

Vanilla Cheesecake

This recipe off allrecipes.co.uk is quick, easy and delicious.

You will need:

  • 150g digestive biscuits
  • 50g butter
  • 300g cream cheese
  • 145g icing sugar
  • 2 teaspoons lemon juice
  • 450ml double cream
  • 1 teaspoon vanilla extract
  • 1 vanilla pod, scraped

 

How to prepare:

1. Melt the butter in a small pan over medium heat

2. Put the biscuits in a strong, clean plastic bag and crush with a rolling pin – or alternatively blitz the biscuits in a food processor

3. Once crushed, stir through the melted butter until well combined

4. Tip into a cake tin and press down firmly into the base and then put in the fridge to chill

5. Mix the cream cheese, lemon juice and icing sugar in a bowl until smooth

6. Whisk the cream in a separate bowl with the vanilla extract and vanilla seeds until soft peaks form

7. Mix the whipped cream and the cream cheese mix together until both are fully combined

8. Spread the cheesecake mix over the top of the biscuit base and chill in the fridge for at least 1 hour

9. Tip… if you fancy something extra, why not decorate with strawberries, or our favourite, maltesers? Yum!
